Medium-lemon colour. It feels like a mix of umami and wasabi; mineral, briny, almost metallic but with surprisingly fine texture. The label says it is “bottled earth”, a concept that fits in with the taste. Weird and fascinating but definitely not a crowd-pleaser. 16.5 points
