The Fino Palmas collection explores the aging potential of Palomino along four aging stages. Level three is a 10-year aged Fino which manages to capture the decay of flor. It was my favourite in the 2015 series. Varnish, vanilla, wood and bitter almond aromas are followed by a winning combination of dry and bitter flavours. There’s more acidity and alcohol here as a result of concentration, but it is still creamy, saline and long on the finish. 18.0 points
