As a result of Oliver Rivière’s passion for Jerez, this white wine from very old Viura vines in Labastida is aged in sherry butts. Only 600 bottles have been produced but the wine is really original. Fermented and aged for six months in 500-litre French oak barrels, it later rests for a year in sherry butts. Golden yellow colour. Toasted, dried fruits (salted almonds), bakery, dried herbs and aniseed aromas.This is a full-bodied, pleasantly warm white that would make a perfect match with cheese. 91 points
