It's not surprising that a sherry nerd like Willy Pérez (top names like Domecq made sparkling wines in Jerez between the 19th and 20th centuries) would end up dabbling in this category. Grapes from El Corregidor vineyard are aged for a year in oak barrels before a second fermentation in the bottle, resulting in a sherry-like style with lovely nuttiness and fresh salty notes that deliver great balance.
