Made from 80+-year-old vines from Fuencaliente, the wine is macerated with skins followed by spontaneous fermentation that begins in stainless steel and ends in 230-litre French oak barrels. There are no fruit aromas here, but rather sulphur notes and a warm character. It is therefore surprising to find such acidity which arguably comes from the Sabro variety, while Gual adds volume. Deeply savoury with a markedly saline finish. Definitely a wine that reflects the soil rather than the fruit. 91 points
