A noble effort to revive the much-reviled Palomino variety which used to be the dominant white variety in Valdeorras until the onset of Godello in the 1980s. Grapes are sourced from As Ermidas, in the Bibei Valley. The wine was fermented and aged in a clay jar and a Manzanilla butt for 24 months. No veil of yeasts involved here (they might go for it in the future), but there is certainly a nod to Sherry. The salty almond notes and the sapid palate merge finely with a spark of Atlantic acidity.
