This single-vineyard Cava is among the new Cava de Paraje Calificado category. Grapes are sourced from Serral del Vell, the estate which surrounds Turó d’en Mota, the family’s best known plot. This is really fine and shows the complexity of extensive aging (toasted almonds, sourdough). Serious, classic, well-defined palate with a pleasant bitterness on the finish.
