A good introduction to modern style txakoli made with relatively uncommon practices like malolactic fermentation and ageing in foudre. Grapes are sourced form a site in Urdaibai, a natural enclave around the Gernika estuary in Bizkaia. Complex nose with herbs, hay, pippin apples and loquats and a deep, beautifully textured palate. Lively but with ripe acidity that adds persistence on the finish.
