Fino Tres Palmas 2020

If we were to use the old Sherry categories this would be a "Fino Amontillado" bringing biological ageing to a 10-year limit to capture the "death of the flor". This 2020 saca comes from a single cask, selected for its still rich presence of yeasts at this stage of ageing. Golden colour with amber hints. Nutty, complex nose with iodine aromas. Powerful, concentrated palate full of salty and chalky flavours and a very long finish.
