This is the only single-vineyard Cava within Codorníu’s new high-end Ars Collecta range made from indigenous grapes. This 100% Xarel.lo, grown on chalky soils in Penedès, is my favourite. Complex fine herbs (aniseed, thyme) and bakery aromas are followed by a broad, structured palate with pleasant citrus notes and great length.
