Codorníu’s new top Cava has broken the category’s price ceiling. A blend of the three single-vineyard, single-varietal Cavas in the new high-end Ars Collecta range, the result feels far fresher and younger than its separate ingredients. Chardonnay and Pinot Noir dominate, but Xarel.lo brings distinctive fennel aromas. Extremely fresh and subtle on the nose with toasted bread notes followed by a zesty, vibrant palate. Good all-round but it will need some time to develop its real potential.
